Apple Tartlets a la Mode

Ingredients

  1. Preheat oven to 400 degrees F.
  2. Put sliced apples in a bow and let them rest while you are preparing the dough and tart shells.
  3. Lay a tart shell on top of pie dough and circle 1 to 1 1/2 inches all around (measure height of the shell to see).
  4. Line 4 tart shells (the kind with removable bottoms) with dough. Gather extra dough to use to make leaves or strips for a basketweave top. Set aside.
  5. Squeeze the apple slices to remove as much moisture as possible. This will help the filling from being too runny.
  6. Toss together sliced apples, sugar, cinnamon, salt, and lemon juice. Adjust according to taste.
  7. Arrange apple slices on prepared tart shells and add the dough leaves or weave strips on top. Sprinkle the raw sugar over the tarts.
  8. Bake for 30-40 minutes until crust is golden brown and cooked through. Let cool slightly before serving.
  9. Add a big scoop of your favorite ice cream or swirl thick caramel sauce over the pie. Dig in!
